Chicken Fried Rice

Tried a new recipe from the Weight Watchers site and it was really good. It was actually very easy to make, tasted awesome- Bear ate it and asked for seconds, which means it must be pretty tasty- and is only 3 points per serving.

The rice took the most time to cook, the rest went very easy. The website says it takes about 13 minutes to make this- not counting the rice, that may be longer than it actually takes. Two thumbs way, WAY up for this one.

To quote my man, Samuel L Jackson, this was tasty and good. Also, cheap.


Chicken Fried Rice

Points value: 3
Prep time: 20 minutes
Cooking time: 13 minutes
Serves 6 (supposedly)
level of difficulty: easy
side dish (but we ate it as our mean this evening and it was filling)

Ingredients:
4 large egg whites
1/2 cup carrots
2 medium garlic cloves
1/2 cup scallions
1/2 cup frozen green peas
3 tbl low sodium soy sauce
2 cups cooked brown rice
12 oz boneless, skinless chicken breast
2 sprays cooking spray


Instructions:
1. Coat a large nonstick skillet with cooking spray and set pan over medium-high heat. Add egg whites and cook, until scrambled, stirring frequently, about 3 to 5 minutes. Remove from pan and set aside.

2. Off heat, re-coat skillet with cooking spray and place back over medium-high heat. Add scallions and garlic; sauté 2 minutes. Add chicken and carrots; sauté until chicken is golden brown and cooked through, stirring frequently, about 5 minutes.

3. Stir in reserved cooked egg whites, cooked brown rice, peas and soy sauce; cook until heated through, about 1 minute. Yields about 1 cup per serving.
